Spring Break Baking Project #3: Epic Muffins

So I didn’t exactly post baking projects 1 or 2, but since I’ve gotten requests for this recipe, I’ll risk giving away trade secrets by sharing (the muffins are so good that they’ve put me in a sharing sort of mood).  Enjoy!

Banana-Nut-Toffee-Chocolate-Chip Muffins

Ingredients:
2 extra ripe, medium bananas, peeled
2 large eggs
1 cup packed brown sugar
1/2 cup butter, melted
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon (+ dash of nutmeg)
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup chopped walnuts (+ ½ cup toffee pieces)

Instructions:
Puree bananas in blender (1 cup). Beat bananas, eggs, sugar, margarine and vanilla in medium bowl until well blended.

Combine flour, baking powder, cinnamon, nutmeg and salt in large bowl. Stir in chocolate chips, toffee pieces and nuts. Make well in center of dry ingredients. Add banana mixture. Stir just until blended. Spoon into well-greased 2-1/2 inch (6 cm) muffin pan cups.  *Sprinkle tops with additional toffee bits.

Bake at 350 degrees F (180 C), 20 minutes or until toothpick inserted in center comes out clean. Cool slightly, remove from pan and place on wire rack.

Makes 14 muffins.

The Maccabeats previewed this song for us (i.e, the board of the Jewish Association, because we are super cool) right before they left campus following the concert they gave at Williams about a month ago.  And now it’s just been officially released.  A few hours ago.  And no, I’m not a stalker, what are you talking about?

Enjoy!

Guess who’s starring in a picture book this fall. Marcel the Shell with Shoes On. Guess who’s publishing it. Razorbill. Guess what it will be printed on. Paper, presumably. Based on the popular web video by Jenny Slate and Dean Fleischer-Camp, the picture book, Marcel the Shell with Shoes On: Things About Me, will be published on November 1 with a 100,000-copy first printing.

Faith is not about certainty. It is, in part, a reflection indeed of my own awareness of my own ignorance and, that though life’s processes can be explained by science, nonetheless the meaning and purpose of life cannot be.

This is unbelievably cool.  I highly recommend that you spend some time checking this out.

Google just came out with Art Project, which is basically Google Street View for major museums around the world, allowing you to “walk around” and see the museum. The craziest part is that they made these insanely high resolution pictures of the paintings, allowing you to zoom really far in and see, in great detail, what the brushstrokes of these paintings look like. Probably far closer than you could actually get at the museum.

This is what Van Gogh’s Starry Night looks like in extreme detail.
